  1. I really enjoy roasting veggies at a high temperature (450F) but I’ve heard roasting them at a higher temperature is actually bad for you (or less good?). Is that true or is that a myth?

    1. Hi Rick,

      Roasting vegetables at really high temperatures can break down some of the nutrients, however, roasting vegetables in general also can help to boost other nutrients. That’s why we recommend 375, not too high, not too low. If you like them extra brown, you could try roasting them at 375 or 400 and then for the last 5 minutes turn the heat up to 450.

  2. Those are some nice photos, but if you’re actually going to roast veggies don’t crowd the pan. You want the veggies to get browned and crisp, but if you crowd the pan they won’t brown at all.
